Ingredients

  • 500 gm sugar
  • ⅓ cup mixed nuts
  • 2 tbsp melon seeds
  • 1 tsp lemon juice
  • 100 gm ghee
  • Orange food colour
  • 250 gm corn flour
  • ½ tsp cardamom powder

Preparations

  1. Bring a pan to heat and add 500 gm sugar to it.
  2. To dissolve the sugar, pour in water, ensuring it's ⅓ the amount of sugar, and let it do so, on a medium-high flame.
  3. In a mixing bowl, add ¾ cup of cornflour.
  4. To make a slurry, add water that is 1½ cup more than the amount of cornflour. 
  5. Mix well to eliminate any lumps.

Bringing it all together

  1. Add this slurry to the dissolved sugar in the pan while stirring simultaneously.
  2. Slightly increase the flame and let it cook for 5–6 minutes, stirring continuously.
  3. Lower the flame once the mixture starts to thicken.
  4. Add the food colour and lemon juice.
  5. Gradually add ghee, starting with 1 big tsp and stir. 
  6. Add the melon seeds and the mixed dry fruits.
  1. Stir and allow it to cook, until it turns transparent and is easy to fold.

Final Steps

  1. Turn off the gas and transfer it to a mould of your choice, layered with butter paper or greased with ghee.
  2. Garnish with melon seeds and dry fruits, pressing them slightly into the mixture. 
  3. Set aside to cool at room temperature for at least 3–4 hours.
  4. Cut, serve and enjoy!
