Ingredients

  • ¼ cup vegetable oil
  • ½ cup brown sugar
  • ½ cup sugar
  • 2 eggs 
  • 1 cup refined flour
  • 1 tbsp cinnamon powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup raisins
  • 1 cup grated carrot

  1. In a mixing bowl, add ¼ cup vegetable oil, ½ cup brown sugar and ½ cup sugar and whisk well.
  2. Break 2 full eggs into it and whisk again.
  3. Combine 1 cup refined flour and 1 tbsp cinnamon powder. Then, add 1 tsp baking soda and ½  tsp salt.
  4. Add ½ cup of raisins and whisk again.
  5. Lastly, add ½ cup of grated carrot and mix.

  1. Take a mould of your choice and line it up with aluminium foil. 
  2. Pour the cake batter and tap it well to settle evenly.
  3. Bake at 180°C in a preheated oven for 45 mins and it's ready to serve!

Special Tip

To make this sweet carrot cake recipe a tad bit sweeter, you can garnish it with powdered sugar, milkmaid or creamy frosting
