Ingredients

  • 140 gm butter
  • Pistachios
  • ¼ cup cashews
  • 1 & ½ cup paneer
  • 180 ml condensed milk
  • ½ cup hung curd
  • ½ cup fresh cream
  • 1 tbsp gelatin
  • ¼ cup warm water
  • Saffron
  • ¼ cup milk
  • ¼ tsp  cardamom powder
  • 15 gulab jamun
  • 2 pack Good Day Chunkies

Crust

  1. Crush the Good Day Triple Chocochip Chunkies biscuits to a fine powder and add to a mixing bowl.
  2. Add the melted butter and some crushed cashews to the bowl and mix well.
  3. Put the prepared mixture in a springform tin and pat it into place to form the crust.
  4. Keep in the fridge to cool for 30 min

Cheesecake Layer

  1. Pour ¼ cup milk into a pan on the stove.
  2. Once the milk is warm, put some saffron and ¼ tsp cardamom powder.
  3. Add 1 tbsp gelatin to the milk and turn the stove off.
  4. Place the saffron milk aside to cool.
  5. Put the paneer, hung curd, fresh cream and condensed milk in the blender and blend really well.
  6. Add the cooled saffron milk to the blender and blend until smooth.

Assembling the Gulab Jamun Cheesecake

  1. Place the 15 gulab jamun to the cooled crust prepared earlier; you can cut them into pieces if they are too large.
  2. Pour the cheesecake layer evenly and pop it into the fridge for about 3–4 hours.
  3. Garnish with toasted and crushed pistachios.
  4. To de-mould the cheesecake from the mould, loosen the sides and open the springform tin to dig into your no-bake gulab jamun cheesecake!

Special Tip

Do you like the taste of cream cheese and whipped cream better? You can replace the paneer, curd, condensed milk, and fresh cream with that instead!
