Ingredients
- ½ cup cashew
- ½ cup caster sugar
- 1 tbsp ghee
- Green food colour
- 4 tbsp gulkand
- 2 tbsp milk
- 3 tbsp mixed nuts
- 1 cup poha
- Red food colour
- Silver vark
- ½ cup mawa

- Grind 1 cup of poha evenly, to form a fine powder.
- Roast this poha in a pan with 1 tsp of ghee for 2–3 minutes on medium flame.
- Add ½ cup of mawa, followed by ½ cup caster sugar and mix well.
- Add some water, along with 2 tbsp of ghee and allow it to cook, till it forms a dough-like consistency.
- Grind and add ½ cup of cashew nuts. (If you prefer, add some green food colouring and mix it well)
- Turn off the gas and remove the mixture on a plate greased with ghee, let it cool.

- In a bowl, take 4 tbsp of gulkand and add mixed nuts of your choice.
- To enhance the colour of the gulkand, add a few drops of red food colour, and mix till it's evenly blended.
Assembly:

- Make sure your poha dough is kneaded to a smooth one.
- Take little portions of the dough, flatten slightly and add a spoonful of the gulkand mixture.
- Roll it into little balls, making sure that the gulkand is well enclosed.
- For a better presentation, decorate it with silver vark.
- Cut in half and serve with sprinkled nuts.
Special Tip
For this gulkand recipe, refrigerate the gulkand ladoos for a while, before serving. This will enhance the cooling properties and sweetness of the gulkand.
