Ingredients
- 1 cup butter
- 1½ cup sugar
- 1 egg
- 1 tsp vanilla extract
- 2 tsp lime juice
- ¼ tsp lime essence
- Green food colour
- Lime zest
- 1 tsp baking soda
- 1 tsp baking powder
- ½ cup desiccated coconut
- 2½ cup all-purpose flour
- Powdered sugar
How to make :
Key Lime Cookies: A Tangy Treat!
- Scoop out 1 cup of softened butter and 1½ cup of sugar in a mixing bowl.
- Whisk well using an electric mixer and add 1 egg along with 1 tsp vanilla extract.
- Pour in 1 tsp of lime juice and ¼ tsp of lime essence along with a dash of green food colour.
- Grate in some lime zest and whisk again.
- Add 1 tsp each of baking soda and baking powder along with ½ cup of desiccated coconut.
- Add 2½ cup of all-purpose flour and mix well using a spatula.
- Knead the dough well using your hands.
- Take a greased baking tray and scoop out small portions of the dough, shaping them into balls.
- Spread some powdered sugar on a plate and coat the cookie dough balls with it.
- Place them into the baking tray and pop them into a preheated oven at 180°C for 20–25 min.
Special Tip
You can add some grated nuts to the dough as well for a crunchy key lime cookie.
