Ingredients

  • 1 cup butter
  • 1½ cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tsp lime juice
  • ¼ tsp lime essence
  • Green food colour
  • Lime zest
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ cup desiccated coconut
  • 2½ cup all-purpose flour
  • Powdered sugar

How to make :

Key Lime Cookies: A Tangy Treat!

  1. Scoop out 1 cup of softened butter and 1½ cup of sugar in a mixing bowl.
  2. Whisk well using an electric mixer and add 1 egg along with 1 tsp vanilla extract.
  3. Pour in 1 tsp of lime juice and ¼ tsp of lime essence along with a dash of green food colour.
  4. Grate in some lime zest and whisk again.
  5. Add 1 tsp each of baking soda and baking powder along with ½ cup of desiccated coconut.
  6. Add 2½ cup of all-purpose flour and mix well using a spatula.
  7. Knead the dough well using your hands.
  8. Take a greased baking tray and scoop out small portions of the dough, shaping them into balls.
  9. Spread some powdered sugar on a plate and coat the cookie dough balls with it.
  10. Place them into the baking tray and pop them into a preheated oven at 180°C for 20–25 min.

Special Tip

You can add some grated nuts to the dough as well for a crunchy key lime cookie.
