Ingredients

  • 1 cup butter
  • ½ cup brown sugar
  • 1 tsp chocolate essence
  • 1 cup fresh cream
  • 3 eggs
  • 4 tbsp cocoa powder
  • ½ cup dark chocolate
  • 2 packs Good Day Chunkies

Crust:

  1. Grind 2 packs of Good Day Chunkies into a coarse powder and mix with melted butter in a large mixing bowl.
  2. Once combined, press this biscuit mixture into a pie mould.
  3. Place the mud pie crust in the fridge for about 15 min to set.

Filling:

  1. Place a bowl on a pan with boiling water and add ½ cup of chopped dark chocolate along with 1 cup of fresh cream.
  2. Keep stirring the mixture to form a smooth ganache, once done, keep it aside to cool.
  3. Add softened butter to a mixing bowl along with ½ cup brown sugar.
  4. Cream the butter and sugar together using an electric mixer.
  5. Add 1 egg at a time to the mixture while whisking it continuously.
  6. Add 4 tbsp cocoa powder and 1 tsp chocolate essence to the bowl and whisk again.
  7. Pour the prepared ganache into the mixture and mix it in.

Bake:

  1. Preheat the oven to 175 degrees.
  2. Pop the Mississippi Mud Pie into the oven and bake for 30–40 min.
  3. Remove and serve!

Special Tip

Make sure that the ganache you prepared is at room temperature before adding it to the egg mixture to prevent curdling.
