Ingredients

  • 250 gm all-purpose flour
  • 400 gm condensed milk
  • 500 ml milk
  • 2 tbsp fennel seeds
  • 100 gm semolina 
  • 1 tbsp cardamom powder
  • 50 gm cashews 
  • 50 gm pistachios 
  • Saffron 
  • ½ cup orange juice
  • 500 ml Britannia ghee
  • 500 gm sugar 
  • 1 cup water

How to make :

Orange Malpua Recipe: A Citrusy Twist

  1. Take a large mixing bowl and add in your all-purpose flour.
  2. Put in about 2 tbsp of semolina or suji to add a bit of crispiness.
  3. Add in your sugar, about 2 tbsp to 1 cup of flour.
  4. Into the mix, add in about 4 tbsp of condensed milk.
  5. Mix the ingredients with a spoon.
  6. Add in your fennel seeds and cardamom powder.
  7. Pour in the milk and whisk until there are no lumps.
  8. Let it rest for about 15-30 minutes.
  9. Grate the peel of an orange into the mix.
  10. In a pan, add oil to fry your orange malpuas.
  11. Pour in a ladle full of batter and wait for it to fry and rise up.
  12. Make a sugar syrup with 1 cup of sugar and 3/4 cup of water.
  13. Add about 3 tsp of orange juice to the sugar syrup. 
  14. Add the fried malpuas into the orange-flavoured syrup and let it absorb. 
  15. Garnish with cashews, pistachios, and saffron.
  16. Once done, serve them up hot!

Special Tip

You can experiment with other fruity flavours by swapping the orange juice out with other fruit juices.
