- 1 ½ cup refined flour
- 1 tsp baking powder
- ½ cup pineapple
- ½ cup butter
- ⅔ cup caster sugar
- ½ cup coconut milk
- 2 eggs
- 2 tsp vanilla extract
- 1 cup whipped cream
How to make :
Pina Colada Cupcakes Recipe
- Preheat the oven to 200°C.
- Add ½ cup of softened butter and ⅔ cup of caster sugar into a mixing bowl and use an electric mixer to cream it together.
- Pour ½ cup coconut milk and whisk again.
- Add 2 eggs into the mixing bowl along with 2 tsp of vanilla extract and whisk.
- Add 1 ½ cup of refined flour and 1 tsp baking powder and whisk twice.
- Add ½ cup of diced pineapple into the batter and mix well.
- Prepare a cupcake tin with cupcake liners and add a scoop to each filling up to ¾th of the mould.
- Bake the cupcakes for about 20 min or until slightly golden.
- Keep them out to cool for about 15 min before frosting.
- Put 1 cup of whipped cream into a piping bag and decorate the cupcakes.
- You can garnish them with toasted coconuts before you dig in!
