Ingredients
- 1 cup Britannia Cream Cheese
- ¼ cup powdered sugar
- 1 tsp vanilla essence
- ½ cup unsalted butter
- ¼ cup brown sugar
- ¼ cup sugar
- 1 egg
- ½ cup pumpkin puree
- ½ tsp vanilla essence
- ½ tsp baking powder
- 1 cup refined flour
- ¼ cup brown sugar
- 1 tsp ginger
- 1 tsp nutmeg powder

Cheesecake Filling:
- In a mixing bowl, add 1 cup of Britannia Cream Cheese.
- Add the powdered sugar and vanilla essence to the cream cheese.
- Mix well and set the filling aside until assembly.

Cookie Dough
- In a large mixing bowl, add ½ cup softened unsalted butter.
- After adding in the brown sugar and white sugar, whisk until combined.
- Add in 1 egg and continue whisking until mixed.
- In the same bowl, add the pumpkin puree to the pumpkin cheesecake cookie.
- Put in your refined flour, baking powder, and a splash of vanilla essence and mix until it forms a dough.

Pumpkin Spice Sugar
- In a small bowl or plate, add in powdered brown sugar.
- Spice it up with ginger and nutmeg powder and mix well.

Assembly
- Form the dough into small balls and flatten them with your fingers.
- Once flattened, add a small dollop of cheesecake filling and wrap the ends shit.
- Gently shape it into a cookie-like formation and flip it around in the pumpkin spice sugar mix.
- Bake all the pumpkin cookies at 180°C in a preheated oven for 10–15 minutes.
- Serve them up and enjoy!
Special Tip
Add a bit of pumpkin puree to the cheesecake filling for an extra shot of pumpkin.
