Ingredients

  • 1 litre milk
  • 4 tbsp lemon juice
  • 1 tbsp corn flour
  • 1 cup granulated sugar
  • 1 litre water
  • ½ litre reduced milk
  • ½ tsp cardamom powder
  • Saffron
  • ¼ cup almonds
  • ¼ cup pistachios
  • ¼ cup cashews
  • ¼ cup sugar

How to make :

Halwai Style Rasmalai Recipe

  1. Take 1 litre of milk in a vessel and bring it to a boil while whisking constantly.
  2. Add 4 tbsp of lemon juice to the milk and continue to boil for 3–5 min.
  3. Take a mixing bowl and put a sieve over it; with a muslin cloth, drain the liquid to be left with a dry mixture. 
  4. Add the dried mixture to a mixing bowl followed by 1 tbsp of corn flour.
  5. Mix using your hands to form a dough.
  6. Take small portions of the dough to make the rasmalai.
  7. Place a pan on the stove and add 1 cup of sugar along with 1 ltr of water.
  8. Mix to dissolve the sugar and add the prepared rasmalai to steam; let it boil for 10–12 min.
  9. Add ½ litre reduced milk to a pan along with ½ tsp cardamom powder and a sprinkle of saffron.
  10. Add ¼ cup each of thinly sliced almonds, pistachios, and cashews, along with ¼ cup of sugar and milk well.
  11. Soak the prepared rasmalai in the milk mixture for about an hour, and your homemade rasmalai is ready.
