Ingredients

  • 1 tsp almonds
  • ½ cup powdered cashew nuts
  • 2 tsp ghee
  • ½ cup mava
  • 1 cup milk
  • ½ cup milk powder
  • 2 tbsp pistachios
  • 1 tsp rose petals
  • ¼ tsp saffron
  • 2 tsp sugar
  • 1 cup sevai 
  • Water

  1. In a pan, add 1 tsp ghee along with 1 cup sevai and roast it well.
  2. Mix 1 cup of milk and add a bit of water.
  3. Stir and cook and low flame till it thickens.
  4. Turn off the gas and set the sevai mixture aside.

Filling:

  1. In another pan, add ½ cup of mava, followed by ½ cup of milk powder and 2 tbsp of sugar.
  2. Add some saffron for colour and ¼ cup of powdered cashew nuts.
  3. Cook it all on low flame.
  4. Then, add 2 tbsp milk and 2 tbsp of pistachios, grounded.
  5. Combine the remaining ¼ cup of powdered cashew nuts to make a paste.

Assembly

  1. In a small mould of your choice, align the sevai mixture to the shape of the mould, leaving a small gap in the centre.
  2. Top up the moulds with the filling paste and garnish with chopped almonds, pistachios and rose petals.

Special Tip

To achieve a perfectly smooth texture, in this festive dessert recipe, do not dry the filling mixture completely. Keep it soft, so it melts in your mouth!
