Ingredients
- 1 ¾ –2 litres full-fat milk
- 3 cloves
- 1 tsp saunf
- 1 stick of cinnamon
- 2 green cardamom pods
- 1 pack of Biscafe Biscuits
- 1 tbsp sugar
- ¼ tsp vanilla essence
- 2 tbsp condensed milk
- 2 tbsp cream
- 1 tbsp butter

Prepare Your Base
- In a large saucepan, pour 1.5 litres of full-fat milk.
- Add 3 whole cloves to the milk.
- Add 1 tsp of saunf.
- Put in a whole stick of cinnamon.
- Crack the skin of 2 green cardamom pods and add it to the milk.
- Put the milk on medium heat and bring it to a boil.

Add the Flavouring
- Put 10-15 Britannia Biscafe biscuits in a blending jar.
- Add 1 tbsp of sugar to the jar.
- Put in ¼ tsp of vanilla essence or extract.
- Cover it with a lid and blend it till you see fine powder.
- Add 2–3 tbsp of milk into the powder.
- Add 1 tbsp of sugar to create the paste.
- Blend it till you get yourself a Biscafe kulfi paste.

Final Assembly
- With a sieve, strain your milk and put it back in a saucepan.
- Add 2 tbsp each of condensed milk and cream into the bowl.
- Put the Britannia Biscafe paste into the milk.
- Place it back on the heat for 15–20 minutes until it starts boiling.
- Once slightly cooled, put the mixture into the kulfi mould.
- Allow the Britannia Biscafe kulfi mixture to drop down to room temperature before putting it in the freezer.
- Once it has cooled and set, place it on your serving dish and garnish it with finely chopped pistachios.
Special Tip
If you don’t have kulfi moulds you can use a muffin tray to create smaller kulfis.
