- ¾ cup all-purpose flour
- 6 tbsp butter
- ¾ cup caster sugar
- 1 tsp red colour
- 1½ cup fresh cream
- Fresh mint
- Salt
- 3 eggs
How to make :

- Prepare a shortcrust dough, using flour and chilled butter and colour it red by adding red food colour; refrigerate for about 20–25 min.
- Take two parchment papers and place the prepared dough in between the two.
- Using a rolling pin, roll the dough out.
- Remove the top parchment paper, and using a cookie cutter, cut the dough into round circles.
- Gently transfer them to a baking tray lined with parchment paper and place them in the freezer until solid.
- Heat up a pan to make the choux paste—to 1 cup of boiling water, add a pinch of salt.
- Scoop out some butter and mix into the water until melted.
- Add ¾ cup all-purpose flour and mix well until it forms a dough.
- Take the dough and place it in a mixing bowl.
- Add 1 egg at a time and whisk well using an electric mixer.
- Transfer the choux paste to a piping bag and pipe the puff onto a baking tray lined with parchment.
- Place the frozen shortcrust discs on top of the choux paste and pop it into a preheated oven at 180°C for about 20 min.
- Take the baked puffs and cut the tops off to fill them with a good filling of pastry cream.
- To garnish the red velvet cream puffs, place a fresh mint sprig on them.
Special Tip
You can add some fresh berries for garnish as well!
